I always have random bits leftover in the fridge, which I find pretty good to mix up to make meals. This was my lunch today: brown lentils, roasted berbere cauliflower, smoked honey roast salmon, spring onions, chillies, gem lettuce, olives, parsley and coriander. I dressed it with sherry vinegar and evoo. Quick, simple and peng.
